It Started in the Mojave Desert

Feeding 5,000 Troops Taught Dan What Food Really Means

Daniel Dhimiter Monroe served in the U.S. Army from 1997 to 2000 as an E-4 Specialist and a proud 92G, Food Service Specialist. Somewhere between feeding 5,000 troops fried chicken out of a mobile kitchen in the middle of the Mojave Desert, something clicked.

Food is so much more than what you eat. It's the intention behind the service. It's support. It's gifting your brothers and sisters something delicious during a time of incredible hardship. That belief never left him, and it became the foundation of everything that followed.

The Journey

Three Decades in the Making

1997 to 2000

U.S. Army, Food Service Specialist

E-4 Specialist, 92G. Dan learned to cook at scale, under pressure, with heart. The love of food was engrained in his soul.

2000

Connecticut Culinary Institute, Hartford

Straight out of the military, Dan committed to the craft, training in Hartford before setting his sights higher.

2004

The Culinary Institute of America, Hyde Park

Dan earned his Bachelor's degree from the Harvard of culinary schools, working in as many restaurants as possible while raising a baby girl. Along the way, a defining chapter in New Orleans studying under the great Paul Prudhomme fortified one lesson: love in every bite.

2006 to 2026

The Pantry, Fairfield

A 20 year run helping build one of Fairfield County's landmark food destinations. Along the way: a 3x Emmy nominated culinary producer for PBS's Restaurant Road Trip, co-host of a nationally recognized radio show, and countless high end catering events.

Today

Easy Eats Is Born

Dan is taking three decades of knowledge and pouring it into farm fresh meal prep for people who are actively trying to eat right, while supporting as many local Connecticut farms as possible along the way.
